Pacheri(paceri) mangga is a sweet,sour and slightly spicy dip;with chunks of mango. Serve with chips,thosai,white rice or nasi minyak and curry.
Ingredients: 2 large unripe mangoes;peeled,sliced and chopped 2 tablespoon oil 1 large onion;sliced 4 cloves(a spice) 4 nutmegs 1 cinnamon stick(3 cm long) 1 tablespoon shredded ginger 3 cloves garlic;chopped 2 tablespoon raisins 1 teaspoon tumeric powder 2 tablespoon sugar 1 teaspoon salt 1 tablespoon tamarind pulp;mix with a little water and strain 2 fresh red chillies;sliced 2 fresh green chillies;sliced 1 teaspoon chilli powder 1/2 teaspoon coriander powder
Method of preparation. In a pot put the chopped unripe mangoes.Add sufficient water.Heat till the water boils.Set pot aside.In a wok heat cooking oil.Add onion and saute till it is golden brown.Then add chopped garlic,shredded ginger,clove,cinnamon and nutmeg.When the aroma is fragrant,add raisins,cooked mangoes(plus the water),tumeric,salt,sugar and tamarind juice.Mix well.Boil the sauce for about 10 minutes.Then,add the sliced fresh red chillies,green chillies,chilli powder and coriander powder.Mix well.Simmer till the sauce thickens.Serve with chips, thosai,white rice or nasi minyak and curry.
