Keledek goreng is a favorite fried snack that is served with coffee or tea.

Ingredients:

200gm plain flour
200gm rice flour
1 teaspoon salt
2 cups water
2kg sweet potatoes;peeled and cut into 1/2in slices
sufficient oil to deep fry

 

Method of preparation:

Combine the two flours in a bowl.Add water and salt.Mix to form a smooth batter. Set aside for 1 hour. Heat sufficient oil in a wok to deep fry. Dip sliced sweet potatoes into batter and fry. Use a sharp skewer to poke into the fritter. If it is soft it is cooked. Remove and place on absorbent paper towel to drain excess oil. Serve hot with coffee or tea.

 

Note:
1. 1 comb peeled ripe bananas (Pisang Raja, Pisang Awak, Pisang Tanduk, Pisang Nangka or Plantain); sliced 1/2 lengthwise and cut; 4in ong. Fritter similarly till golden brown (Pisang goreng).
2. Regular banana is not suitable for frying.
