Bubur pulut hitam is a delicious, slightly sweet porridge; with chewy glutinous rice.

500gm glutinous rice; black or brown variety; rinsed
2cm ginger; coarse pounded
2 pandan (screwpine) leaves; shredded
1 cup sugar
salt to taste


Method of preparation:

In a pot place the rinsed rice, ginger and pandan leaves. Add water to 1 1/2in above the rice level. Bring to boil and cook till the rice is soft and sticky. Add water if necessary to maintain the liquid level. Add the sugar and stir over medium flame till the sugar is dissolved. Add salt to taste. Pour into bowls and serve warm.
