Kuih rempeyek is peanut fritter; crunchy, slightly spicy anytime snack.

Ingredients:

300gm peanuts kernels;washed and cleaned
750ml coconut milk;no additives                  )
175gm rice flour                                        )
1 teaspoon salt                                         ) combine to form smooth batter
3 tablespoon cumin seed;dry roast/grind       )
3 tablespoon coriander seed;dry roast/grind  )
sufficient oil to deep fry

 

Method of preparation:

A flat pan and a wok is required to make kuih rempeyek. Heat sufficient oil in a wok to deep fry. In a separate range heat some oil in a flat pan. Scoop some batter in a semispherical ladle. Add 8 or 10 peanut kernels into the ladle. Pour the batter into a thin circular shape about 8cm in diameter. Make sure the peanuts are spread out. Fry for 2 to 3 minutes. Use a slotted spoon and transfer the kuih rempeyek to the wok for deep frying. Remove when the fritter is golden brown. Cool on absorbent paper.Store in an airtight container.

 

Note:
1. 2 or 3 kuih rempeyek could be made in the flat pan at a time.(space permitting)
2. For extra crunch,reduce the number of peanuts but add cleaned raw anchovies to the batter; and fry.
