Bubur kachang/kacang merah is a delicious,easy to make dish. The porridge tastes sweet and creamy with bits of soft red beans.Serve hot in a bowl.

Ingredients:

300gm red beans
150gm brown sugar
100gm granulated sugar
300ml coconut milk
2 pandan (screwpine) leaves;knotted
sufficient water
salt

 

Method of preparation:

In a pot boil red beans till it is cooked,but firm.Drain and set aside in a bowl.In another pot add coconut milk,brown sugar,granulated sugar and pandan leaves.Heat on high flame till the liquid boils(and the sugars dissolve).Next add the cooked red beans,salt (and water as desired).Stir continuously till the red beans are soft(could be squashed between fingers).Remove pandan leaves.Serve hot in a bowl.
